3 Keto Super Bowl Snacks You Need to Make

Our Lions didn’t make it to the Super Bowl….again….no surprise. But we’re hosting for the Super Bowl, and what Super Bowl party in a Keto home would be complete without Keto snacks? We’re showing you how to make 3 Super Bowlicious snacks that will be a hit!

Broccoli Tots – Makes 20
2 cups or 12 oz uncooked or frozen broccoli (I used riced broccoli from Trader Joe’s)
1 large egg
1/4 cup onion, diced
1/3 cup cheddar cheese, shredded
2/3 cup homemade “breading” mix
2 Tbsp parsley
1/2 tsp pink salt
1/2 tsp ground pepper

Homemade “Breading” Mix
1/2 cup grated Parmesan cheese
1/2 cup almond flour
2 tsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 tsp sea salt
Mix all ingredients together (this is the same “breading” we used for avocado fries – so good!!)

To Make:
Preheat the oven to 400 degrees, and grease a baking sheet or line with parchment paper (we use silpat mats).

If using regular broccoli, blanch it in boiling water for 1 minute, then remove it and shock it with cold water. Then drain it well and chop finely.

Mix the broccoli with all of the ingredients. Using a small ice cream/cookie scooper, or your hands, get about a Tbsp and a half and gently roll it into a ball, then form into a tot shape. If you don’t use gloves (also linked below) like I do, you’ll want to wash your hands after every few to prevent the “dough” sticking to your hands. Place the tots on the baking sheet.

Bake until golden brown and crispy, about 18-24 minutes, turning halfway through. Best enjoyed hot (but not too hot) with your choice of Keto approved dipping sauce: sugar-free ketchup, sugar-free BBQ sauce, home-made ranch, mustard, queso, or chicken enchilada dip (last recipe).

Macros per 1 tot: Protein 3.1 g, Fat 3 g, Calories 44, Tot. Carb 2.6 g, Fiber 1.1 g, Net Carb 1.5 g

Bacon Wrapped Pickles – Makes 24
12 mini dill pickles
8 oz cream cheese, softened
1 1/2 cup cheddar cheese, shredded
1/2 tsp garlic, minced
12 slices bacon, cut in half

Preheat the oven to 350 degrees. Cut pickles in half and scoop out the centers. You can discard these, eat them, or make them into a relish. In a bowl, combine cream cheese, cheddar, and garlic until fully incorporated. Spoon the mixture into the pickles and wrap with half a slice of bacon and place onto a parchment lined (we use silpat mats) baking sheet and bake until cheese is melted and bacon is crispy, about 15 minutes. Best served immediately.

Macros per bacon wrapped pickle half: Protein 8 g, Fat 13 g, Calories 140, Tot. Carb 1.5 g, Fiber .4 g, Net Carb 1.1 g

Chicken Enchilada Dip – makes 24 servings
1 1/2 cups chicken, shredded
8 oz cream cheese, softened
8 oz mayo or sour cream
8 oz green Chile peppers, diced
2 cups, plus 1 cup shredded Mexican blend cheese
2 Tbsp taco seasoning

Preheat oven to 350 degrees.

Add all ingredients (minus 1 cup of cheese) to a large bowl, and stir to combine. Put mixture into a 10” or larger oven safe skillet, dutch oven or casserole dish, and flatten out mixture. Then top with remaining 1 cup of Mexican cheese blend and cook for 30 minutes.

When done, top with Cilantro, Parsley or Green onion (optional & not included in the macros)

Macros per serving: Protein 4.2 g, Fat 5.8 g, Calories 70, Tot. Carb 1.6 g, Fiber 0.3 g, Net Carb 1.3 g
