These may not taste *exactly* like cake, but they’re pretty dang good!
1/2 cup almond flour
1 cup coconut flour
1/3 cup cashew butter
1/4 cup maple syrup
1/2 teaspoon paleo vanilla extract
1 tablespoon coconut oil
1/4 cup unsweetened almond milk
1 tablespoon ground flax
Pinch of salt
1/4 cup freeze-dried strawberries, crushed
3 tablespoons raw cacao
1/2 cup melted coconut oil
5 tablespoons raw cacao
3 tablespoons honey
1/2 cup melted almond butter
Crushed freeze-dried strawberries
Mix batter ingredients, minus cocoa and strawberries. Divide in half. In one half, mix the raw cacao. In the other half, mix the crushed freeze-dried strawberries.
Roll batter into 1-inch balls and freeze until solid, about 20 minutes.
Push a stick into each ball and dip balls in chocolate sauce. Place pops in a glass, stick side down, over a drip plate. Put pops in fridge for about 10 minutes. Re-dip, then sprinkle freeze-dried strawberries on the strawberry ones, and cacao nibs on the chocolate ones. Put back in fridge until firm, about 10 minutes. Enjoy!
