Paleo Baking – Lamingtons Recipe
INGREDIENTS
For the sponge cake
½ cup – coconut flour
½ tsp – baking powder
6 – large eggs
1/3 cup – pure honey
1 tsp – pure vanilla extract
4 tbsp – coconut oil, melted

For the icing
2 tbsp – pure honey
½ cup – boiling water
¼ cup – raw cacao powder
2 tbsp – coconut oil

For rolling
2 cups – shredded coconut

INSTRUCTIONS
1. Preheat oven to 350 F.
2. Lightly grease an 8×8 inch baking pan, line with baking paper and set aside.
3. Place the coconut flour, baking powder in a food processor.
4. Pulse a few times to combine.
5. In a large bowl beat the eggs with honey.
6. Pour in coconut oil and mix to combine.
7. Add the coconut flour mixture and stir to combine.
8. Spoon batter into prepared pan and smooth surface.
9. Bake for 25 minutes.
10. Remove from the oven, let it cool.
11. Cut the cake into 20 pieces.

For making the icing
1. Mix well all the ingredients in a bowl.
2. Dip the pieces of cake in icing, drain and roll in shredded coconut on a plate.
3. Place on a wire rack, stand for at least 1 hour.
