Breakfast – Vanilla Pancakes
2 Tablespoons Brown Sugar
1 Teaspoon Baking Powder
1/4 Teaspoon Salt
240ml Non Dairy Milk
1 Tablespoons Apple Cider Vinegar
1 Teaspoon Vanilla Paste / Extract
Mix all the dry ingredients together.
Add the wet ingredients and mix it all together
Set the mixture aside for 3-5 minutes.
Heat up a pan and pour the batter into a nonstick pan over medium heat.
Flip the pancakes when the top begins to bubble and cook until they are golden.
Serve with syrup, peanut butter, fruit, etc.
Lunch – Pasta Bowl
Pesto of your choice
Dinner – Sweet Potato Curry
1-2 Tablespoons Vegetable Oil
1-2 Garlic Cloves
1-2 Tablespoons Ginger
1 Tablespoon Curry Powder
1 Tablespoon Turmeric
1/4 Teaspoon Spicy Paprika
1 Teaspoon Cumin
1 Can – 400g – Diced Tomatoes
1 Can – 400ml – Coconut Milk
1 Medium Sweet Potato
1 Can – 400g – Kidney Beans
1 Can – 400g – Chickpeas
1-2 Tablespoons Veggie Broth Powder
Pepper To Taste
In a large pot, heat the oil over medium heat.
Add the onion and cook for 3 to 5 minutes, or until the onion is translucent.
Add the garlic, spices and 1/4 Can Diced Tomatoes and let the mixture simmer for 2
Add the sweet potato, kidney beans, chickpeas, rest of the tomatoes with their juices, and coconut milk. Stir to combine, cover, and simmer over medium heat for 20 to 30 minutes, until the potatoes are fork tender.
Mash one-third of the mixture to thicken the curry.
Add 1-2 Tablespoons of Veggie Broth Powder and Pepper To Taste.
