Bone marrow is the soft, gelatinous substance that fills the cavities of bones. It is a nutrient dense and energy rich whole food, containing hemopoietic stem cells, healthy essential fats, collagen, and minerals.

However, much of the western world views bone marrow as a byproduct of meat. The nutritional value of bone marrow, and the corresponding health benefits, are thus greatly underappreciated. There are two types of bone marrow – red bone marrow and yellow bone marrow. Each performs a different function. Red bone marrow has a rich blood supply, and produces red blood cells, white blood cells, and platelets. The red coloration comes from the presence of hemoglobin in red blood cells. Red marrow occurs throughout the skeleton during infancy. At birth, a calf’s bone marrow is comprised completely of red marrow.

Yellow bone marrow mainly occurs in the marrow cavity of long bones. As a calf ages, red bone marrow is replaced by the yellow bone marrow. It mainly acts as a store of fat cells. The yellow coloration comes from the carotenoids in fat. Yellow marrow produces fat cells, cartiliage and bones. From a nutritional standpoint, red marrow contains more active substances, such as hemopoietic stem cells. Because our bone marrow is extracted from young calves, it contains a high percentage of red marrow and thus has greater nutritional value than bone marrow from older animals.

Bone marrow is largely comprised of healthy fats. Not too long ago, nutritionists erroneously professed that eating foods containing fat would lead to obesity and heart disease.
